How to make it:


  • 59.14 mL Irish Whiskey
  • 29.57 mL Cold Brew Coffee
  • 14.78 mL Vanilla syrup
  • 3 Dashes cacao bitters
  • 1 Orange twist for garnish


  1. Combine all the ingredients in a mixing glass with ice
  2. Stir to chill and combine the ingredients
  3. Strain into double old-fashioned glass over fresh ice
  4. Garnish with orange twist & Enjoy!

What’s an Emerald Isle inspired cocktail without a hint of green? “The last word cocktail is one that I always see on St. Patrick’s Day cocktail menus. It seems like an obvious choice with its light green hue, thanks to the Chartreuse. Chartreuse is one of those ingredients, that while the flavour is so unique and influential, it can add so much complexity to a cocktail with just a small amount.” A Saucer Champagne is an ideal vessel for this celebratory serve.

How to make it:


  • 14.78 mL Gin
  • 14.78 mL Maraschino liqueur
  • 14.78 mL Fresh squeezed/strained lime juice
  • 14.78 mL Green Chartreuse
  • 59.14 mL Champagne
  • 3-5 Mint leaves for garnish


  1. Combine all the ingredients, except champagne, in a cocktail shaker with ice
  2. Shake to chill and combine the ingredients
  3. Double Strain into a champagne coupe
  4. Top with champagne
  5. Garnish with mint leaves & Enjoy!

Agave Appletini

A fun take on a classic cocktail results in a drink worth toasting to (again and again). “Whenever we are in Dublin we find ourselves drawn to the classic, and simple, whiskey highball, with cloudy apple juice. This cocktail is one that draws inspiration from that, while adding some blanco tequila in the mix to bring forward the more vegetal notes.” Savour the moment with the Lismore Diamond Martini glass in hand.

How to make it:


  • 44.36 mL Blanco Tequila
  • 29.57 mL Cloudy (unfiltered) apple juice
  • 14.78 mL Lime juice
  • 14.78 mL Agave syrup
  • 1 Sliced green apple for garnish


  1. Combine all the ingredients in a cocktail shaker with ice
  2. Shake to chill and combine the ingredients
  3. Double Strain into a Martini glass
  4. Garnish with apple fan & Enjoy!
